Zelda: TOTK
The Giant Horses, Ganon's and the White Stallion may not be good for Speed or Pulling Vehicles, but their high HP makes them worth finding in Hyrule.
There are several horses in The Legend of Zelda: Tears of the Kingdom that are worth taming for their different stats. However, there are also several unique horses available for Link to tame, such as the Giant Horses, but they will only be found in very specific locations in Hyrule.
Unlike some of the other unique horses, like Zelda's Golden Horse in Zelda: TOTK, the Giant Horses will only come with two stats. They will each have 5 stars in Strength and 2 Stars in Speed, but no Stamina or Pull. Therefore, they will not dash nor will they be able to pull any of Link's crafted vehicles.
Ganon's Giant Horse won't be difficult to spot, even running among other horses, unfortunately, he is on one of the far ends of the map. So if Link has not unlocked the Southeast part of the map, it will take some work to reach.
Ganon's horse is going to be found near Hateno Bay, therefore, the best place to paraglide down from is going to be the Lab in Hateno Village in Zelda: Tears of the Kingdom. Once reaching the lab, paraglide to the southeast to find Ganon's Horse roaming on a peninsula sticking out from the mainland.
If possible, the best way to start taming Ganon's Giant Horse will be to land directly on it when paragliding down so that Link doesn't have to attempt to sneak up on it. When landing on it, it immediately begins trying to throw Link off.
Unfortunately, while some of the more temperamental wild horses can be tamed with a little over one Stamina ring, the Giant Horses will require almost three complete Stamina rings to tame them. Anything less and Link will continuously be thrown off and unable to tame it. After taming it successfully, take it over to the closest stable in Zelda: TOTK to register it.
Giant Horses will not be able to equip any other saddle and bridle than those designated for their size, which ends up being Ganon's Saddle and Bridle. So there will not be any real customization for either of these horses other than naming them.
The Giant White Stallion is the only other Giant Horse available in Zelda: TOTK. Tracking it down is perhaps easier than cornering Ganon's because it is in a canyon and isolated, so there isn't much room for it to get away. The Giant White Stallion can be found near the Horse God Bridge to the west of where Ganon's Giant Horse is found.
Cross the bridge over the Lake of the Horse God to the isolated canyon area where two travelers are waiting with their horses. They will mention the Giant White Stallion which is further into the canyon along the path.
Some players may recognize the area from Zelda: Breath of the Wild in reference to Malanya, the Horse God. Now that Link has found it, taming it, will, unfortunately, require the same amount of Stamina as Ganon's Horse. So if Link has not acquired enough Stamina Vessels in Zelda: Tears of the Kingdom then he will need to be sure to cook up a bunch of Stamina boosting recipes.
With that in mind, the process is exactly the same. Either land on it from the sky or sneak up on it by crouching or using Stealth Armor and Elixirs. After that, attempt to calm it until it stops trying to throw Link off and allows him some control.
Once it has calmed down and been tamed, take it to a nearby stable to give it a name and register it. Keep in mind that there is a limit to how many horses can be registered, so if Link already has eight horses registered, he will need to get rid of one to register the Giant Horses.
While the stats for Giant Horses aren't desirable for Speed, and they don't have Pull or Stamina at all, they are Strong horses, meaning they have a high HP. So if heading into any tough areas and hoping to attack via horseback, these are not bad options in The Legend of Zelda: Tears of the Kingdom.
